One of the richest in Italy for archeological findings, the region was settled from the 1st millennium BC by several Irillyc and Italic peoples. Later, the Greeks expanded until reaching the area of Taranto and the Salento. After the fall of Rome, Apulia was held successively by the Goths, the Lombards and, from the 6th century onwards, the Byzantines. In comparison with the country as a whole, the economy of Apulia is characterised by a greater emphasis on agriculture and services and a smaller part played by industry. Which is the most delicious product from Puglia? Pasta Of course!!!!
           Ingrediens per 4 servings:

350 gr. of Conchiglie Mare e Monti Tarall'Oro,mushrooms 150 gr. crab pulp 150 gr. butter 40 gr a small bunch of arugula one clove of garlic,salt.

           Ingrediens per 3 servings:

250gr.Pennette Integrali Tarall'Oro,1/2 red pepper,1/2 yellow pepper,150 gr. tuna,1 little onion,a tuft of parsley,an olives dozen without stones,olive oil and salt.

           Ingrediens per 4 servings:

400gr. Orecchiette Casarecce Tarall'Oro, 500gr. turnip broccoli "cime di rapa", 1 clove of garlic, 4 anchoves, 4 tablespoons of olive oil, 4 ripe tomatoes.

TAGLIOLINI  WITH  SAFFRON
RUOTE ORTOLANO CRUDAIOLA
                    Preparation:

In a wide-bottomed frying pan brown in olil leek and bacon, chopped before. Add pepper and salt, fry lightly all tha compound, in another side cut zucchini(as comb) and add them in the pan trying to cook them slightly crisp. Cook the Tagliolini "al dente" in a lot of salted water,drain.Combine with the sauce. Stir and serve hot.

                    Preparation:

In a large bowl cut in small pices tomatoes and basil.Oil and season with salt and leave season for 15 min. Cook pasta in salted water drain and combine with sauce.Season with cacioricotta cheese grated into large chunks and serve.

            Ingredients for 3 servings:

250g. Tagliolini with saffron Tarall'Oro,300 gr. zucchini,100 gr speck ( or bacon ),a leek, extra virgin olive oil, salt .

            Ingredients for 4 servings:

350g. Ruote Ortolano Tarall'Oro, 100g. fresh cacioricotta, 4 little tomatoes, 8 leaves of basil, extra virgin olive oil, salt.

                   Preparation:

Put the butter in a pan,brown the garlic and add the mushrooms,after a few minutes add crab pulp and cook for 15 min. In a lot of salted water cook the pasta,drain and combine with the sauce.Sprinkle of arugula and serve.

                   Preparation:

Cut the peppers into strips,make them wilt in oil with onion and parsley on a moderate flame for 15 min.Combine the tuna after taken away oil and olives cut in two. Season with salt,cover and bring to cooking.Boil pasta "al dente " in a lot of salted water,drain,add the seasoning and serve.

                   Preparation:

Clean and wash turnip broccoli. Cook the orecchiette with turnip broccoli in salted water. Meanwhile pour the oil in fryng pan, brown the garlic and add anchovies and tomatoes cut into pieces and the chilli. drain pasta and season with the compund. Stir and serve hot.
